Abhiraj Singh Rathore:

Mr. Abhiraj Singh Rathore is a versatile, adventurous and fanatical young entrepreneur with a sound understanding of all aspects of hospitality and demonstrated ability of success.  Basically he is from Jodhpur and studied in Nainital. He did his hotel management course from Ram Institute of Hotel Management and Catering Technology, Dehradun. He worked as Supervisor at The Oberoi Hotels and Resort, Jaipur for 2 years. Then after this worked in The Leela Kempinski, Mumbai as an Executive. He was supposed to join JW Marriott hotel in Delhi as an assistant manager but then he decided to start up with his own business and left his job.

Amit Jangara:

Mr. Amit Jangara, a young and proficient entrepreneur. He is from Haryana and he did his schooling from Chandigarh.  He worked in Jet Airways for a month then he joined Best Western International as Assistant. Then he worked in The Oberoi Hotels and Resort, Jaipur. Then he decided that he will not do job anymore and start with his own business.

Sagar Miglani:

Sagar Miglani, a dynamic personality whose hometown as well study town Dehradun.  He did his hotel management course from Blue Mountains College of hotel management and is skilled in Guest Service Management. He worked as guest service associate at Oberoi Hotels & Resorts, Jaipur. Then he left his job to start up with own business.

Q) So how did you plan to start such a café and that too in Udaipur? 

A. As we worked in a resort and we had to work rigorously for 12 to 13 hours, it was so stressful so all three on us met and decided to open our own ‘café’. But Udaipur was not there in our ambit at that time we had five cities in our vision viz. Dehradun, Delhi, Jaipur, Chandigarh and Masuri and we projected them. We had a small surveys in all these cities but the results were not satisfactory. Last year when I (Abhiraj Singh Rathore) came to Udaipur I had a survey I used to ask everyone that “What would you feel if there is a café in this city?” People gave positive response and even I thought that it will work out here. For a month I searched for a perfect place and fortunately I came to know about this place (Hitawala Complex, New Fatehpura, Panchwati) with open surroundings, good parking place and engrossing Saheliyon-Ki-Bari nearby.

 

Q) Who is your inspiration?

A. My(Abhiraj Singh Rathore) inspiration is my mother, she always motivated me. I always wanted to open my own café but it was very difficult for me to leave my job and start with a business but my mother inspired me a lot. She had a strong belief on me that I can overcome all the hardships and will achieve success.

 

Q) What is the quality of service you provide?

A. We are committed to provide highest quality services of product to our customers at a local level. We balance between What We Do and Who We Serve. We serve fresh food with quality product, quality service and quality atmosphere at affordable prices.

 

Q) As you said you know What We Do and Who We Serve. When did you developed this habit?

A. Actually it comes with experience, I (Abhiraj Singh Rathore) have been to a lot places in this country and outside this country which helped me to develop sense of customers taste, preferences and level of their satisfaction which they desire.

I want to give this credit to my parents who were in tourism and made me understand about hotels and hospitality.

 

Q) What is the customer satisfaction you hope to create?

A. We envisage providing the kind of ancillary products and services that conveys a unique message and encourages our existing customers to bring their family members along and invite their friends as well.

 

Q) Tell us about your experience.

A. My father was in tourism so from childhood I (Abhiraj Singh Rathore) know about the hotels star ranking and about various kind of people in various cities and also about their various taste. I worked in both City and resort environment, so it becomes very easy to judge people and their taste.

Q) What are the challenges you faced to open a café?

A. We think that there are no big challenges in this world. According to us to set up café culture in Udaipur was a challenge, It took time to make people understand the difference between different flavours of coffee.

 

Q) How did you find your partners and tell us about your relationship.

A. Three of us were colleagues in The Oberoi Hotels and Resort, Jaipur. There we met and became friends and then decided to leave the job to start with a café.

We have a very good mutual understanding among us and our ideas never conflicted. Before taking any decision we meet, give our opinion and pick the best of it. We respect each other a lot.

 

Q) What do you enjoy the most about your business?

A. It’s always great to hear first-hand from guests how enjoyable their experience was, whether it’s a review, a feedback or their constructive criticism, but it helps us to improve. People come here, meet new people, host a meeting or simply relax and enjoy their time within their community. This makes us happy.

 

Q) Who manages the day-to-day operations in the cafe?

A. All three of us manages everything with consistency. In case one is not present the other one administers everything and in this way we have developed a good understanding amongst us.

 

Q) If you were a customer in your own cafe, what would you order from the menu?

A. I (Abhiraj Singh Rathore) love to eat chicken tikka pizza in non-veg, healthy sandwich in veg, I love crunchy lover pizza, chocolate and brownie shakes, and ice mokka is my favourite and it is recently added in menu.

 

Q) Do you change your menu according to the season?

A. Yes, we keep on revising our menu in every 2-3 months. We add new items and flavours, we have summer menu, winter menu, spring menu etc. As this is summer season, we added a lot of citric and refreshing flavours. We keep a note of new dishes and introduce them and monitor how the patrons are liking this.

 

Q) What do you feel sets you apart from the others?

A. We never competed as we know what we are providing, what customer needs and about the market demand. We got our way to impress customers by providing a diverse clean café with fresh food and attractive menu.

 

Q) As you people are from different parts of India, what do you feel about Udaipur?

A. Udaipur is amongst the most beautiful cities of India with good climatic conditions. It has dual quality, quality of nature and quality of men. We love people of Udaipur the most as they are so gentle and generous. We would like to settle here only.

 

Q) We have heard that you are about to open your branches in other cities also. What is the status?

A. Yes, we are about to open shortly in Chandigarh, Pune and Jaipur.

Top Winter Food – You Must Try being a Rajasthani

What comes in your mind when you think of winters? Chapped lips and cracked heels? Cold and dry weather and heavy woollen wears? Sure winter is all about these, but do you also know that winter is the best season to improve immunity? During this time, people feel hungrier. Incredibly, the body engine works better in the winter and food is better digested. This aids in providing more nourishment to the body.

Fresh seasonal vegetables, dry fruits, dairy products, whole grains and rich fresh ghee! In winters, our body craves for rich food which provides warmth along with nourishment. Apart from the naturally available food, Indian (and specially Rajasthan) cuisine allow us discover the depth of richness of cooked food that is made especially in winters.

High energy and protein foods provide the required fuel to combat the cold. That’s why many Indian households make ‘sheera’ made up of rava, whole-wheat flour, moong-dal, vermicelli, daliaa, badam). ‘Halwa’ (gajar, doodhi, pumpkin etc.), ‘paak’ and ‘ladoos’ are best for this season. Fresh green fresh whole grains, available in Rajasthan and Gujarat, called ‘ponkh’ are considered a winter delicacy.

One cannot imagine the season without Garama-Garam Gajar ka Halwa with lots of kaju badam. Not just the deliciousness but due to its healthiness, one must not hesitate eating it due to calorie reasons. The beta-carotene in carrots is an excellent source of vitamin A and a powerful anti-oxidant. As far as the calorie factor is concerned, one must remember that anything confined within a limit is always beneficial.

Try delicious bajra, makai or jowar ki roti and serve hot with ghee and jaggery or with baingan bharta and udad ki dal. Jowar and bajra also make great meals during winter. They are rich in calcium and as winter is the time we strengthen our body, these millets help in absorption of calcium and build muscle tissue.

Raab is another specialty of Rajasthan that relishes in winters and can be made of makki, bajra or gur. Makki ki raab is the most popular. It is best suited for winters as it gives enough warmth to the body and thus combats cold.

Lapsi is a special sweet dish of Rajasthan which is meant to eat during winters. This fabulously tasty sweet dish features the goodness of broken wheat and the tantalizing aroma of cardamom.

Try eating garam pyaaz muli parathas with garlic chutney. White radish, onion and garlic (dry and spring varieties): Rich in isothiocyanates and indoles, phytochemicals that help prevent cancer. Their strong flavour helps to pep up the taste of food. Try eating onions and radish fresh as salad in large quantities.

When it comes to green, one cannot forget methi, palak and sarso in this season. We all know it better as methi, loaded with vitamins, minerals, fibre and phytonutrients. It can lower cholesterol, help keep your diabetes under check and more. Make those methi parathas, today!

Palak is counted among the world’s healthiest veggies, thanks to its nutrient richness. Vitamins, minerals, carotenoids and a host of flavonoids that offer antioxidant protection – this leafy vegetable – have them all. Whether you choose to make some palak paneer, or just stir fry it, make sure you’re eating this one!

Eat the very special makki ki roti and sarso ki saag. The young tender leaves of the plant are flavorful. Fresh mustard greens are an excellent source of several vital antioxidants, vitamins, minerals and carotenes. Include the goodness of these leaves in your diet this winter season.

Hara Chana/Fresh Green Garbanzos is an absolute delight with the pods hanging from long leafy stems.   Boil them, add some tomatoes, onions, salt, lemon juice and red chili powder and serve as a snack. The traditional way is to roast it on a sigdi and then eat them. Delicious!

Roast or boil some peanuts and have them with your tea this chilly evening or make some peanut burfi or chikki with jaggery because they freshly arrive in the winter. Peanuts are rich in antioxidants and also provide warmth to our system. Peanuts are a good source of vitamin E and B3. Do you know, it is in fact a good source of monounsaturated fats, it is a heart-friendly food too.

Sesame seeds will keep you warm too. Give a try eating til ke laddoos and til chikkis this winter. Sesame seeds are best eaten during winter season as they produce heat in our body and also serve as a good source of calcium. It is best taken after a meal as it improves digestion. It is a good source of minerals like iron, magnesium, manganese and copper. These seeds help your skin to retain moisture too!

I’m sure no one dislikes eating peas. Add them in your pulav or make some yummy muttar panner. Peas, with their sweet taste and starchy texture come loaded with phytonutrients that provide us with anti-inflammatory and antioxidant benefits. Further, recent research shows that these legumes can help prevent stomach cancer.

In winters another Rajasthan specialty is Gond ke laddoos. Enjoy discovering the special sweetness of this dessert.

Among fruits, Pomegranates are a good source of polyphenols, a powerful antioxidant. It is also a good source of minerals like calcium and phosphorus. This combination works well in boosting our immunity”. Winter is the season for fresh citrus fruits and oranges are our top pick here. This tart-sweet fruit packs in a load of the very essential vitamin-C that helps your body in its fight against germs; in addition to potassium, folate, minerals and fibre. It’s low in calories too! Have you started eating them yet? Well, we have all heard it – “An apple a day, keeps the doctor away”. Bite into one for your mid-day snack, and reap its benefits! Papaya and pineapple are believed to provide warmth. Amla is loaded with Vitamin C, and is very good to step up your immunity. That’s the reason why ‘amla juice’ and ‘amla murabba‘ are available in plenty during winter.

Dates, along with the other dry fruits, are warm in nature and are highly recommended in the winter months. Not only are they a good source of fibre, iron, magnesium, calcium and vitamins (C and B3), they are also a good source of energy. Consume them as they are or as a barfi, pulp or added to milkshakes and smoothies.

The cold weather can interrupt your workout routine and can even send you on a mood roller coaster that can lead to overeating due to stress and boredom. Include proteins as well as carbohydrates in your diet. So this year, spend the cold season staying warm and healthy.

Father’s Day – Let’s celebrate this Weekend

This weekend becomes all the more special as it hosts Father’s Day too. Yes it’s Father’s Day this Sunday; a day to thank the person whom you call “Dad”, “Daddy”, “Papa”, “Baba” etc. etc. etc. By whatever name you call him, whatever the language you may use, the love and respect for father remains the same in each heart irrespective of boundaries and borders.

Children are always more closer to their mother; we share our worries and sorrows and happiness with the lady of the house but very rarely to the man who spends his whole day out working hard to provide us with all luxuries of life. The reason being obvious – he is never at home except at nights and weekends, he always carry that typical silence with him making it all the more difficult for us to share our words with him. But we forget one thing; no matter how less he speaks to us, he loves us and cares for us the same way our mother loves and care for us. We see him as a hard core but no he is also a human being with a heart beating for his children.

So why not break this unspoken silence and tie a bond of loving relationship with this man and make this Father’s Day a memorable one for him. You need not spend a lot of money and have a big show off party or something; you just have to find a way to express your love and respect for him and a glittering smile won’t leave his face the whole day long. Let’s try your hand with ‘karchi and kadai’. 😉 make a dish with your hands for your dad, be it his favorite dish or the one we are sharing with you. And if you are a master chef of your kitchen then you can even make a whole meal for him. Here we are sharing the recipe of “Paneer Chilli” taken out right from the kitchen of “Swastik Restaurant” in Fatehpura. I being a big big fan of it can say that it’s the best Paneer Chilli you can get in Udaipur.

Ingredients :-

Paneer – 200gm (cut into square pieces of appropriate sizes), Maida – 100gm, Corn flour – 50gm, Capsicum (cut into square pieces of same size as that of Paneer), Onion (also cut into same size), Ginger, Garlic, 2-3 green chilli cut into small pieces, Soya sauce, Ajeenomotto (Chinese salt), Table Salt, Red Chilli Powder, Oil for deep frying

 

Procedure :-

  • Make a smooth batter (paste) by mixing Maida and Corn flour in one-fourth cup of water.
  • Coat the pieces of paneer in batter and deep fry it in the hot oil till the pieces turn light brown.
  • Take a Frying pan / Kadhai and put it on gas. Add some oil in it and then add garlic, ginger, onion, capsicum and green chilli. Saute over high flame for 1 to 2 minutes.
  • Now add soya sauce, corn flour paste and salt (to taste) and allow it to come to boil.
  • Put in the fried paneer and mix well.
  • Serve hot garnished with green chilli and onion.

 

Don’t forget to put a hand-made greeting card along with the dish on the dining table. Enjoy the tempting dish with the whole family and make the evening a delicious one. 😉

Rejuvenate Summertime with fruits like Grapes, Watermelon and Litchi

Sit on your lounge chair in your balcony , chatting with your friends online. Life has become more simple and easy. Everything we need is just a phone call away. This easy life has restricted humans to do that bit of physical exercise which is required to keep the body fit and healthy. We need proper nutrition and a fit and body. After all health is wealth. Ice cream, Pastries , Snacks and other fast food items may be tempting, ever thought how sick they make you feel ??

Step away from the fattening food this summer and switch to organic, its low in fat and high in vitamins. Fresh fruits are full of nutrients which your body needs for proper functioning. Encourage people around you to include more fruit in their diet.

Watermelon

Thirst quenching, Sweet and Juicy Watermelon:

Watermelon is packed with some of the most important antioxidants in nature and is an excellent source of vitamin C, vitamin A, beta-carotene. Vitamin C and beta-carotene are very good at getting rid of harmful molecules. Serve with a fresh mint leaf.

Litchi

Litchi has many health benefits as it is abundant in nutrients like iron, Zinc, copper, selenium where as Calcium, phosphorus, and magnesium is a mineral essential triad for the formation of boneand framework of a fit body. It is required by children who are in a period of growth and also by adults to prevent osteoporosis. Fat content in the fruit is very low, so very good to be consumed by all age groups . It really helps prevent dehydration and keeps the body cool. Consume litchi every day to refine the skin and enrich the blood to improve physical strength.

Grapes

Colored, Fragrant, Plump Grapes :

Grapes are a healthy component of a person’s diet and have an abundance of nutritional benefits.Grapes are low in fat and free of saturated fat, sodium and cholesterol, and are a good source of Vitamins.
